Extra Brut Champagne
A spicy and complex Champagne, full yellow in color with a fresh and persistent mousse. The aroma varies from ripe apple and citrus notes to nuances of oak and fresh herbs. The taste is powerful, fresh dry and has a long, balanced aftertaste.
Blancs Reserve, Chardonnay
Erik de Sousa makes the Cuvée Mycorhize from 100% chardonnay grapes from 3 different grand cru vineyards in Avize. These biodynamically farmed plots are located in the Grand Cru Côte des Blancs, with vines more than 50 years old. Erik works the soil with a horse and thus avoids that a heavy tractor compresses the soil and therefore contains less air and biological life. After the first, natural fermentation, the wine is transferred to oak casks of 225 liters (15% of which are new). This is followed by a maturation of 3 years in pupitres, which creates beautiful aromas (brioche). The dosage is only 3 grams per liter. It is an exclusive, high quality terroir Champagne with a very limited production of only 1212 bottles.
